Regional Recipes: Manchester Tart

Welcome to the first of a regular blog post about regional dishes from across the UK. Every so often we’ll upload pictures of our favourite foodie treats from around the UK along with a recipe for you to try at home. This week is the Lancashire favourite, Manchester Tart.

While it’s certainly more famous for its sport than cuisine (although back to the football later), Manchester is a culinary star in its own right not to mention home to one of my favourite puddings!  Manchester Tart is a popular dessert combining custard and raspberry jam in a sweet pastry case and is completely delicious!  Although Mrs Beeton recorded the first recipe for Manchester Tart in her Victorian cookbook, most people will remember Manchester Tart from their school days where it was a popular lunchtime treat.  In our house, however, the tart has more sporting significance as it is made when Manchester United play their bitter rivals Manchester City or Liverpool. However you choose to enjoy Manchester Tart or any other regional dish for that matter, it’s a great way to get to know a new part of the UK.

Ingredients

1 sheet ready-rolled shortcrust pastry

4 tablespoons raspberry jam

1 pint milk

4 tablespoons custard powder

4 tablespoons caster sugar

1 teaspoon vanilla extract

5 tablespoons desiccated coconut

 

Method

  1. Pre-heat the oven to 200C.  Line a 24cm dish with pastry, prick all over with a fork and bake blind for about 20 minutes.  Leave to cool.
  2. Mix the custard powder, sugar and vanilla extract with a small amount of milk in a saucepan to a smooth paste.  Gradually add the rest of the milk and cook over a low heat until the custard has thickened.  Set aside to cool.
  3. Spread the jam over the cooled pastry case.  You may need to melt the jam slightly if it is tricky to spread.
  4. Top with the cooled custard and sprinkle over the coconut.  Chill in the fridge until the custard has firmed up.
